Measuring each kind of sugar
- Granulated sugar pours freely. Fill the cup and level it; there's no need to pack or spoon.
- Brown sugar is moist and holds air, so US recipes mean packed: press it into the cup until it keeps the cup's shape when turned out. Loosely filled brown sugar weighs only about 145 g per cup.
- Powdered sugar (confectioners' or icing sugar) is very light and settles in the bag. Spoon it in and level. Sifted powdered sugar weighs about 100 g per cup.
Light and dark brown sugar weigh the same per cup; dark has more molasses, which changes flavor and color, not volume.
Swapping sugars
To replace granulated sugar with brown sugar, swap by weight or use the same packed volume; the extra moisture makes bakes softer and chewier. Don't swap powdered sugar for granulated by the cup: you'd use 40% less sugar, and the cornstarch in it changes the texture.
